Onigirazu (Japanese Rice Sandwich)

- •1/4 cup Carrotsdiced
- •1/2 piece Avocado
- •1 block Tofumedium-firm, frozen and thawed
- •3 tbsp Soy sauce
- •3 tbsp Corn starch
- •1 tbsp Flax seedsground
- •3 tbsp Water

Prepare the sushi rice according to package instructions.

Freeze and thaw the tofu twice to achieve a spongy texture. Squeeze out excess moisture.

Prepare the flax egg by mixing ground flax seeds with water. Let sit for 10 minutes.

Mix soy sauce and corn starch into the flax egg to create a slurry.
