Ingredients
  • 1 sheet Nori
  • 1 cup Sushi rice
  • .5 cup Lettuce
  • 1/4 cup Carrotsdiced
  • 1/2 piece Avocado
  • 1 block Tofumedium-firm, frozen and thawed
  • 3 tbsp Soy sauce
  • 3 tbsp Corn starch
  • 1 tbsp Flax seedsground
  • 3 tbsp Water
  • .5 cup Neutral oilfor frying
  • 1/4 cup Pickles(optional)assorted, homemade

    Prepare the sushi rice according to package instructions.

    Freeze and thaw the tofu twice to achieve a spongy texture. Squeeze out excess moisture.

    Prepare the flax egg by mixing ground flax seeds with water. Let sit for 10 minutes.

    Mix soy sauce and corn starch into the flax egg to create a slurry.

    Coat tofu pieces in the slurry and fry in neutral oil until golden brown.

    Lay a sheet of nori on a flat surface. Spread a layer of sushi rice on top.
